Chicken Casserole
- 1 pkg. dressing mix
- 1 stick oleo, melted
- 1 c. water
- 2 1/2 c. diced chicken
- 1/2 c. mayonnaise
- 1 can chicken or mushroom soup
- 3/4 c. diced onion
- 1/2 c. diced celery
- 3/4 tsp. salt
- 2 eggs
- 1 1/2 c. milk
- approximately 1 c. grated Cheddar cheese
- Melt oleo in water and add dressing mix. Toss lightly but not well. Place 1/2 mix in greased casserole (13 x 9 x 2). Mix chicken, onion, celery, salt and mayonnaise and spread over dressing in casserole. Cover with remaining 1/2 dressing mix. Beat eggs. Add milk and pour over the top. Cover and refrigerate overnight. Remove 1 hour before baking. Spread undiluted soup over top. Bake at 325u0b0 for 40 minutes. Sprinkle cheese over top; it will melt.
