Crunchy Hot Crab Bites
- 1 1/2 c. crab meat or use tuna, small cooked shrimp or deviled ham
- 1 Tbsp. fresh lime juice
- 1/2 tsp. grated lime peel
- 1 green onion, minced
- 2 Tbsp. minced parsley
- 1 tsp. Worcestershire sauce
- 1 tsp. hot prepared mustard or to taste
- several dashes your favorite hot pepper sauce to taste
- salt and pepper to taste
- 2 Tbsp. unsalted butter, melted
- 16 Melba toast rounds or French bread slices
- 1/2 c. grated Swiss or Cheddar cheese
- Preheat broiler.
- Combine crab, lime juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot pepper sauce.
- Taste and adjust seasonings.
- Brush melted butter on toast rounds and arrange in a single layer in a broiler pan.
- Top each round with a portion of the crab mixture, then with 1 1/2 teaspoons cheese.
- Broil until cheese is melted and crab mixture is hot.
