Spinach And Radicchio Salad With Lemon Vinaigrette
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon sugar
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon kosher salt
- 1/2 cup thinly sliced radicchio
- 1/2 cup cherry tomatoes, halved
- 1 (5-ounce) package baby spinach and arugula blend
- Combine first 6 ingredients in a large bowl, stirring with a whisk. Add remaining ingredients to bowl; toss to combine.
