Mamma'S Pepper Jelly

  1. Place peppers and vinegar into a blender container.
  2. Chop to medium-fine consistency.
  3. Pour into large stainless steel boiler. Add sugar, stirring to mix well.
  4. Bring to a boil over medium-high heat, stirring constantly.
  5. (Watch carefully to prevent mixture from boiling over.)
  6. Remove from heat.
  7. Strain through a large stainless steel strainer.
  8. Return to a boil; boil for 5 minutes, stirring constantly.
  9. Remove from heat.
  10. Immediately add Certo and a drop or two of red or green food coloring, if desired.
  11. Pour jelly into sterilized jars and seal.
  12. Give jelly as gifts or serve as a spread with cream cheese and crackers.
  13. Makes 6 (1/2 pint) jars.
