Broiled Salmon With Citrus Salsa
- 4 (6-ounce) salmon fillets
- Cooking spray
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup coarsely chopped orange sections (about 1 large)
- 1 cup coarsely chopped grapefruit sections (about 1 large)
- 2 tablespoons minced fresh cilantro
- 1/2 cup chopped red bell pepper
- 1/4 cup finely chopped red onion
- 1 jalapeno pepper, seeded and finely chopped
- 1 tablespoon sugar
- Preheat broiler.
- Place fillets on rack of a broiler pan coated with cooking spray. Brush fillets with olive oil; sprinkle with salt and pepper. Broil 10 to 12 minutes or until fish flakes easily when tested with a fork.
- While fillets cook, combine orange sections and remaining ingredients in a bowl. Serve with fillets.
