Mom'S Pineapple-Nut Congealed Salad
- 1 small pkg. orange jello
- 2 pkg. unflavored Knox gelatine
- 1 (#2) large can crushed pineapple, drained
- 1 c. pineapple juice from drained pineapple
- 2 c. orange juice
- 2 c. Cool Whip or 1 c. light cream, whipped
- 1 c. water
- 1 c. pecans, broken into pieces
- 1 c. fine grated carrots
- 1 Tbsp. mayonnaise
- Boil one cup water; dissolve jello and gelatine mixture into water and cool.
- Add orange juice and pineapple juice.
- Whip cream and fold in nuts, pineapple, carrots and mayonnaise.
- Fold this into cooled jello mixture.
- Place in mold and refrigerate. When mold begins to set, stir up to prevent the nuts and pineapple from sinking to the bottom.
- When set, place in hot water and turn out immediately.
