Black Eyed Pea Casserole

  1. Brown sausage in a heavy skillet and drain drippings; remove sausage and set aside. In skillet, saute onion in oil until soft. Cut chicken breasts into strips and cook in skillet until browned and almost done. Combine sausage, onion and chicken strips with remaining ingredients in a 2 quart baking dish; cover with foil. Bake at 350u0b0 for 35 minutes. Uncover and cook for 15 minutes. Serve over rice or pasta.
