Chicken Salad Mold
- 2 envelopes unflavored gelatin
- 1/2 c. cold water
- 1 c. mayonnaise
- 2 c. cooked chicken, chopped
- 1/4 tsp. salt
- 1/4 tsp. paprika
- 1/4 c. chopped green olives
- 3 Tbsp. chopped pimento
- 2 Tbsp. chopped onion
- 3 Tbsp. lemon juice
- 1 1/2 tsp. horseradish
- 2 Tbsp. chopped green pepper
- 1 c. chopped nuts
- 1/2 pt. whipping cream, whipped
- In large bowl, soften gelatin in cold water for 10 minutes. Add all other ingredients except whipped cream; mix well.
- Fold in whipped cream.
- Place in oiled 9 x 5-inch loaf pan and refrigerate until firm.
- Unmold and slice thin to serve.
- Place on watercress or lettuce leaves.
- Makes 8 to 10 servings.
