Herb-Bran Muffins
- 1 c. all-purpose flour
- 1/4 c. whole wheat flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 2 Tbsp. sugar
- 2 Tbsp. toasted sesame seed
- 1/4 tsp. dry mustard
- 1/2 tsp. herb of your choice (suggestions: sage, dill weed, oregano, sweet basil, parsley, marjoram, summer savory, rosemary, coriander or cardamom)
- 1 c. 100% bran cereal
- 1 c. skim milk
- 1 egg
- 2 Tbsp. melted butter or margarine
- Stir together the flours, baking powder, salt, sugar, sesame seed, dry mustard and herb of choice.
- Set aside.
- In a large mixing bowl, combine the bran cereal and the milk.
- Let stand 2 minutes.
- Add the egg and butter or margarine, blending well.
- Add the flour mixture, stirring only until combined.
- Coat a 12-muffin tin with nonstick cooking spray or line with muffin cups.
- Fill each 2/3 full with muffin mixture.
- Bake at 400u0b0 for 18 to 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
