Chili
- 3 lb. lean ground beef
- 1/4 c. olive oil
- 1 qt. water
- 1 tsp. ground cumin
- 1 tsp. ground oregano
- 1 tsp. cayenne pepper
- 6 Tbsp. yellow corn meal
- 6 Tbsp. chili powder
- 3 tsp. salt
- 4 cloves garlic, chopped
- 1 tsp. sugar
- 3 Tbsp. paprika
- 3 Tbsp. flour
- 1 c. water
- Heat
- olive oil; add ground meat.
- Sear over high heat, stirring
- constantly,
- until meat is gray.tdd water and cook covered at a bubbly simmer for 1 1/2 hours.
- Add all remaining ingredients,
- except
- flour and meal.
- Cook another 30 minutes at same
- bubbly simmer.
- Next add thickening mixed with 1 cup cold water.
- Cook 5 minutes longer to determine if more water is needed for desired consistency.
