Kneaded Chocolate Fudge
- 2 Tbsp. butter
- 2 sq. unsweetened chocolate
- 3 c. sugar
- 1 c. milk
- 1/4 c. honey
- 1/8 tsp. salt
- 1 tsp. vinegar
- 1 tsp. vanilla
- 1/2 c. chopped nuts
- Melt butter and chocolate in saucepan.
- Add sugar, milk, honey and salt.
- Bring to a boil; cover and boil 2 minutes.
- Uncover and cook, without stirring, until a small amount of the mixture dropped in cold water forms a soft ball (238u0b0 on a candy thermometer).
- Remove from heat; add vinegar.
- Let stand until lukewarm.
- Then add vanilla and beat until thick and mixture loses its gloss.
- Add nuts and turn out on buttered plate.
- Let stand until cool enough to handle.
- Knead with fingers for 4 to 5 minutes.
- Shape into two rolls, each about 2-inches in diameter. Wrap in wax paper and slice when cool.
