Creole Beans And Rice

  1. Sort and wash beans.
  2. Place in a Dutch oven.
  3. Cover with water and soak overnight.
  4. Drain beans.
  5. Add pork and cover with water. Cover and cook 45 minutes.
  6. Add all remaining ingredients except sausage and rice.
  7. Cover and cook over low heat 1 hour, stirring occasionally.
  8. Add sausage; cook, uncovered, over low heat for 45 minutes, stirring occasionally.
  9. Serve over rice.
  10. Yields about 12 servings.
  11. We like this dish with Mexican Corn Bread.
