Lo-Fat Cheese Potatoes
- 4 c. diced potatoes
- 2/3 c. lo-fat cottage cheese
- 1/2 c. light sour cream
- 2 tsp. flour
- 1 tsp. salt
- 1/4 tsp. garlic
- dash of pepper
- 2 oz. lo-fat Cheddar cheese
- 1/4 c. chopped onion
- 1/4 c. cornflake crumbs
- 1 tsp. melted margarine
- Boil the potatoes in water until tender. Drain. Place potatoes in ungreased 1 1/2-quart baking dish. Combine in processor bowl or blender the cottage cheese, sour cream, flour, salt, pepper and garlic. Blend until smooth. Add mixture to cheese and onion.
- Stir gently.
- In small bowl, combine cornflake crumbs and margarine. Mix well. Sprinkle over the potatoes. Bake at 350u0b0 for 20 minutes. Let stand 10 minutes before serving.
- Serves 8.
