  4. 1 lb. Sweet Grass Dairy Asher Blue cow's milk cheese
  5. 2 cups hickory-smoked almonds
  6. 1 lb. Medjool dates
  7. Almond crackers or buttery crackers
  8. Wine suggestion: Port or full-bodied red wine (such as Cabernet)
  9. Variation 2:
  10. 1 lb. Locust Grove La Mancha Reserve sheep's milk cheese
  11. 1 (2-oz.) container quince fruit paste
  12. 1 1/2 cups Marcona almonds
  13. Rosemary crackers
  14. Wine suggestion: Spanish sherry (such as Amontillado) or White Meritage (such as St. Supery Vertu)
  15. Variation 3:
  16. 1 lb. Sweet Grass Dairy Green Hill (Camembert-style) cow's milk cheese
  17. 1 cup peach preserves
  18. 2 cups pecans, toasted (about 1/2 lb.)
  19. Assorted butter crackers
  20. Wine suggestion: Champagne or Vouvray (such as Chenin Blanc)
