Grandma'S Bread And Butter Pickles
- 4 qt. thin sliced cucumbers
- 6 medium white onions, sliced and separated into rings
- 2 green peppers, chopped (not too small)
- 3 cloves garlic (remove before filling jars)
- 1/3 c. rock salt
- ice cubes
- 1 tsp. turmeric
- 1 1/2 tsp. celery salt
- 3 1/2 c. sugar
- 3 1/2 tsp. mustard seed
- 3 1/2 c. vinegar (distilled white)
- Slice and measure cucumbers.
- Dump into large pan(s) (turkey roasting pan(s) work well).
- Add onions, peppers and whole garlic cloves. Add salt. Cover with ice.
- Mix thoroughly.
- Let stand 3 hours. Drain thoroughly. Combine remaining ingredients.
- Heat. Pour mixture over drained cucumber mix.
- Heat, mixing frequently (cover for quicker heating); do not boil.
- Ladle into sterile quart jars.
- Place in boiling water bath.
- Process for 6 minutes. Makes 7 to 8 quarts.
