Hawaiian Pork Chops
- 1 (4 1/2 oz.) can pineapple slices
- 1 (10 1/2 oz.) can beef broth
- 2 Tbsp. lemon juice
- 1 medium green pepper, chopped
- 6 large pork chops
- 1 tsp. salt
- 1 tsp. thyme
- 1/2 c. plum jelly
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- 1 medium onion, chopped
- Drain pineapple.
- Combine juice from pineapple, broth, lemon juice, green pepper and onion.
- Arrange pork chops in a 13 x 9 x 2-inch baking dish.
- Sprinkle with salt and thyme.
- Pour liquid around pork chops.
- Bake, uncovered, for 50 minutes at 425u0b0.
- Stir jelly into pan liquid.
- Turn chops and bake 10 minutes more. Combine cornstarch and water; stir into pan liquid.
- Top each chop with a slice of pineapple.
- Lower oven to 350u0b0 and bake for 10 minutes.
