Baked Fish Fillets
- 1 1/2 lb. fish fillets (flounder or red snapper; fresh or frozen)
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 c. skim milk
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 tsp. yellow mustard
- 1/4 tsp. seasoned salt
- 3 Tbsp. lemon juice
- 2 Tbsp. bread crumbs
- paprika
- Thaw fish; sprinkle with salt and pepper.
- Place fish in greased 1-quart casserole.
- Pour milk over fillets.
- Bake in preheated 350u0b0 oven for 20 minutes or until fish flakes easily with fork.
- Remove from oven; drain off and reserve milk.
- Melt butter in skillet; stir and blend in flour.
- Gradually add reserved milk; cook, stirring constantly, until mixture has thickened.
- Add mustard, seasoned salt, lemon juice and mix well. Pour sauce over fillets in baking dish; sprinkle with bread crumbs.
- Bake 10 minutes.
- Dust lightly with paprika before serving.
- Serves 4.
