24-Hour Wine Omelette
- 1 loaf French bread (large)
- 6 Tbsp. margarine, melted
- 3/4 lb. Swiss cheese, shredded
- 1/2 lb. Jack cheese, shredded
- 9 slices salami, coarsely chopped
- 16 eggs
- 3 1/4 c. skim milk
- 1/2 c. dry white wine
- 4 green onions, minced
- 1 Tbsp. Dijon mustard
- 1/4 tsp. pepper
- 1/8 tsp. ground red pepper
- 1 1/2 c. nonfat sour cream
- 1 c. Parmesan cheese
- Butter 2 shallow 9 x 13-inch baking dishes.
- Spread bread over the bottom and drizzle with butter.
- Sprinkle with Swiss and Jack cheeses and salami.
- Beat together eggs and next 6 ingredients. Pour over cheese.
- Cover dishes with foil, crimping edges. Refrigerate overnight.
