Memphis Slaw
- 1 tablespoon light brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon paprika
- 1/2 teaspoon dry mustard
- 1/2 teaspoon dried oregano
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon granulated garlic
- 1/4 teaspoon ground coriander
- 1/4 teaspoon onion powder
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1/2 head cabbage (about 1 lb.)
- 1 cup diced green bell pepper
- 1 cup diced red onion
- Whisk together brown sugar, kosher salt, paprika, dry mustard, oregano, freshly ground black pepper, granulated garlic, ground coriander, and onion powder in a bowl. Whisk in mayonnaise and vinegar until sugar dissolves. Cut cabbage into thick slices; cut slices crosswise. Fold cabbage, bell pepper, and red onion into mayonnaise mixture until coated. Let stand 1 hour before serving, tossing occasionally.
