Tuna Pasta Salad With Salad And Fruit
- 3/4 cup canned white beans, rinsed and drained
- 1 1/2 ounce low fat shredded mozzarella cheese
- 3/4 cup frozen corn
- 3/4 med fresh zucchini
- 4 tablespoon low fat milk
- 1 1/2 teaspoon egg replacer
- 1 cooking spray
- 1/3 teaspoon black pepper
- 1/2 cup tomato suace, low sodium
- Preheat oven to 350 degrees F. Spray a small casserole dish with cooking spray. Drain and rinse canned beans. Prepare egg replacer by whisking together 2 tablespoons of water for every 5 teaspoons of mix. Cut zucchini into bite size pieces. Combine zucchini, beans, frozen corn and tomato sauce in the casserole dish. In a small bowl, combine milk, egg replacer and pepper, mix well and stir into the vegetable mixture. Sprinkle cheese over the top and bake for approximately 30 minutes, until set. Serve.
