Chocolate Zucchini Cake

  1. Sift dry ingredients and set aside.
  2. Beat eggs until frothy; beat in oil and sugar.
  3. Add chocolate and flavoring.
  4. Fold in dry ingredients.
  5. Squeeze excess moisture from zucchini in colander. Add to mixture, then nuts and dates.
  6. Pour in a greased and floured 10-inch tube pan.
  7. Bake at 350u0b0 for 1 hour 15 minutes or until done.
  8. Let stand inverted on rack 20 minutes and glaze with chocolate icing.
  9. I only use 1/2 the icing.
