Arctic Lime Freeze
- 1 (12-ounce) can thawed limeade concentrate, undiluted
- 1 (12.3-ounce) package reduced-fat silken firm tofu, drained
- 1 1/2 cups water
- Mint sprigs (optional)
- Grated lime rind (optional)
- Place limeade and tofu in a blender; process until smooth. Add 1 1/2 cups water; pulse to combine. Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon the mixture into a freezer-safe container; cover and freeze 2 hours or until firm. Garnish with mint and rind, if desired.
