String Beans In Sour Cream And Tomato Sauce

  1. Cook the green beans in lightly salted boiling water.
  2. Don't overcook.
  3. Drain and set aside.
  4. Melt butter in a large skillet and add onions and green pepper.
  5. Stirring occasionally, cook 5 to 8 minutes until tender but not brown.
  6. Stir in tomatoes and basil. Boil rapidly 1 to 2 minutes until most of the juice has evaporated. Stir in the green beans.
  7. Mix salt, sour cream, chopped egg and a few grindings of pepper.
  8. Stir into hot vegetables and serve.
