String Beans In Sour Cream And Tomato Sauce
- 1 lb. string beans or 2 (10 oz.) pkg. frozen green beans
- 4 Tbsp. butter
- 2 c. thinly sliced onions
- 1 small green pepper, cut into 1/2-inch pieces
- 3 medium tomatoes, peeled, seeded and coarsely chopped
- 1 1/2 tsp. dry basil
- 1 egg, hard-boiled and chopped
- 1 c. sour cream
- 1 tsp. salt
- black pepper
- Cook the green beans in lightly salted boiling water.
- Don't overcook.
- Drain and set aside.
- Melt butter in a large skillet and add onions and green pepper.
- Stirring occasionally, cook 5 to 8 minutes until tender but not brown.
- Stir in tomatoes and basil. Boil rapidly 1 to 2 minutes until most of the juice has evaporated. Stir in the green beans.
- Mix salt, sour cream, chopped egg and a few grindings of pepper.
- Stir into hot vegetables and serve.
