Quick-And-Easy Pear Coffeecake
- 1 1/4 cups firmly packed brown sugar
- 1/3 cup vegetable oil
- 1/2 teaspoon almond extract
- 2 large egg whites
- 1 large egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1 1/4 cups diced pear
- 1/4 cup dried currants
- Cooking spray
- Preheat oven to 350u0b0.
- Combine first 5 ingredients in a bowl; beat at low speed of a mixer until well-blended. Combine flour and next 5 ingredients (flour through cloves); stir well. Gradually add flour mixture to brown sugar mixture; beat just until blended. Stir in pear and currants.
- Pour batter into a 9-inch square baking pan coated with cooking spray. Bake at 350u0b0 for 40 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes on a wire rack.
