Cranberry-Hoisin Turkey Buns
- 1 cup rice vinegar
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 2 cups thinly sliced English cucumber
- 14 frozen Chinese steamed buns
- 2 1/2 cups leftover shredded skinless white meat turkey (about 12 1/2 ounces)
- 2 1/2 tablespoons hoisin sauce
- 1/3 cup cranberry sauce
- 4 green onions, cut into (1-inch) pieces
- Combine first 3 ingredients in a small saucepan over high heat, stirring until sugar dissolves. Pour vinegar mixture over cucumber. Let stand 20 minutes; drain.
- Prepare buns according to package directions.
- Combine turkey and hoisin in a bowl; toss to coat. Spread 1 teaspoon cranberry sauce on each bun. Top evenly with turkey mixture, cucumbers, and onions.
