Meatloaf With Mozzarella, Mushrooms And Pepperoni
- 1 1/2 pounds ground sirloin
- 1 1/2 cups finely chopped button mushrooms
- 1 cup shredded part-skim mozzarella
- 1/3 cup Italian breadcrumbs
- 1/3 cup finely chopped pepperoni
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 3/4 teaspoon salt
- 2 large eggs, lightly beaten
- Cooking spray
- 2 tablespoons ketchup
- Combine sirloin, mushrooms, mozzarella, breadcrumbs, pepperoni, oregano, garlic, salt and eggs in a large bowl and mix gently with your hands to combine. Form mixture into a 9-inch-by-6-inch loaf. Lightly coat slow cooker with cooking spray; place loaf into the slow cooker.
- Brush meatloaf with ketchup, cover, and cook on low until meat is cooked through, about 5 hours.
