Spinach Pie Triangles
- 10 oz. pkg. frozen chopped spinach
- 1/2 c. chopped green onions (with tops)
- 2 Tbsp. chicken or vegetable broth
- 16 oz. tub fat-free cottage cheese
- 1 c. crumbled Feta cheese
- 1/2 c. fresh chopped parsley
- pinch each ground nutmeg and cinnamon
- 8 sheets phyllo pastry
- olive oil
- Pam cooking spray
- salt and pepper to taste
- 2 Tbsp. fresh chopped mint
- Defrost spinach and squeeze out excess moisture.
- Simmer onions in broth until tender.
- Mix onions, spinach, cheeses, herbs and seasonings.
- Spray a cookie sheet with Pam.
- Take two sheets phyllo dough and cut into 4 long strips.
- Dab lightly with olive oil.
- Put 1 heaping tablespoon spinach mix at one end of the strip.
- Fold over to form a triangle over and over.
- Dab olive oil on top.
- Place on cookie sheet and bake at 375u0b0 for 20 minutes or until browned.
