Raisin-Cranberry Granola Bars
- 3/4 cup all-purpose flour
- 2 tablespoons chilled butter, cut into small pieces
- 1/2 cup packed light brown sugar
- 1 1/2 cups uncooked regular oats
- 1/3 cup chopped dates
- 1/3 cup raisins
- 1/3 cup dried cranberries
- 2 teaspoons grated orange rind
- 1 teaspoon ground cinnamon
- 2 large egg whites, lightly beaten
- 1/4 cup applesauce
- 1 teaspoon vanilla extract
- Cooking spray
- Preheat oven to 350u0b0.
- Lightly spoon flour into dry measuring cups; level with a knife.
- Cut butter into brown sugar with a pastry blender until crumbly. Stir in flour, oats, and next 5 ingredients.
- Combine egg whites, applesauce, and vanilla; stir well. Add to oat mixture; stir well.
- Press mixture into a 9-inch square baking pan coated with cooking spray. Bake at 350u0b0 for 15 to 18 minutes. Cool completely on a wire rack. Cut into squares.
