Salmon Burgers
- 16 oz. canned salmon
- 1/4 c. oil
- 1/3 c. salmon liquid
- 1/4 c. parsley
- 1/2 tsp. salt
- 6 buttered buns
- 1/2 c. chopped onion
- 1/3 c. dry bread crumbs
- 2 eggs, beaten
- 1 tsp. powdered mustard
- 1/2 c. dry bread crumbs
- lemon wedges (optional)
- Drain salmon, reserving 1/3 cup liquid.
- Flake.
- Cook onion in oil until tender.
- Add salmon liquid, 1/3 cup crumbs, eggs, spices and salmon; mix well.
- Shape into 6 cakes; roll in crumbs.
- Fry in a heavy pan in about 1/8 inch of oil over moderate heat.
- Brown on one side.
- Turn carefully; brown on other side.
- Total cooking time is 5 to 8 minutes.
- Drain on paper towel.
- Place on buns. Serve with lemon wedges.
