Salmon Burgers

  1. Drain salmon, reserving 1/3 cup liquid.
  2. Flake.
  3. Cook onion in oil until tender.
  4. Add salmon liquid, 1/3 cup crumbs, eggs, spices and salmon; mix well.
  5. Shape into 6 cakes; roll in crumbs.
  6. Fry in a heavy pan in about 1/8 inch of oil over moderate heat.
  7. Brown on one side.
  8. Turn carefully; brown on other side.
  9. Total cooking time is 5 to 8 minutes.
  10. Drain on paper towel.
  11. Place on buns. Serve with lemon wedges.
