Darlene'S Zucchini Relish
- 10 c. zucchini squash
- 4 c. onions
- 2 red peppers
- 2 green peppers
- 5 Tbsp salt
- 2 1/2 c. vinegar
- 1 tsp. nutmeg
- 1 tsp. cornstarch
- 1 tsp. dry mustard
- 1 tsp. turmeric
- 1/2 tsp. pepper
- 2 tsp. celery seed
- 5 c. sugar
- 1 qt. ripe tomatoes
- 2 qt. green tomatoes
- 3 large onions
- 1 large cucumber
- 1 qt. cabbage
- 2 c. celery
- 3 green peppers
- 1 pod red hot pepper
- 2 cloves garlic
- 1/2 c. salt
- 4 c. brown sugar
- 1 Tbsp. each of celery seed, mustard seed, ground ginger and ground cinnamon
- 1/2 tsp. ground cloves
- 2 qt. vinegar
- Chop all vegetables before measuring ensuring you have 5 1/2-6 qts. total chopped veggies.
- Mix veggies with salt and let stand overnight.
- Drain.
- Add other ingredients and simmer until there is no excess liquid.
