Darlene'S Zucchini Relish

  1. Chop all vegetables before measuring ensuring you have 5 1/2-6 qts. total chopped veggies.
  2. Mix veggies with salt and let stand overnight.
  3. Drain.
  4. Add other ingredients and simmer until there is no excess liquid.
