Flourless Peppermint Brownies
- 3/4 cup granulated sugar
- 1/4 cup unsweetened cocoa
- 3 tablespoons canola oil
- 1 teaspoon instant coffee granules
- 1/2 teaspoon baking powder
- 1/2 teaspoon peppermint extract
- 1/8 teaspoon salt
- 1 (15-ounce) can black beans, rinsed and drained
- 3 large eggs
- 1/2 cup bittersweet chocolate chips
- 2 tablespoons powdered sugar
- Preheat oven to 350u0b0.
- Place first 9 ingredients in a food processor; process until completely smooth, scraping sides of bowl occasionally. Fold in chocolate chips; pour batter into a 9-inch square metal baking pan.
- Bake at 350u0b0 for 20 minutes or until edges of brownies begin to pull away from sides of pan. Cool 20 minutes in pan on a wire rack. Sprinkle with powdered sugar.
