Vegetable Soup
- 3 slices bacon, chopped
- 1 c. chopped celery
- 1/4 c. chopped onion
- 2 c. (1/2-inch) potato cubes
- 1 c. thin sliced carrots
- 1/4 c. water
- 3 Tbsp. flour
- 3 c. vegetable juice
- 2 c. water
- 1 pkg. frozen peas
- 1 tsp. salt
- 1/4 tsp. pepper
- Combine bacon, celery and onion in a 5-quart casserole. Microwave on High until bacon is crisp and vegetables are tender, 4 to 6 minutes.
- Add potatoes, carrots and 1/4 cup water.
- Cover and microwave on High until potatoes are tender, 12 to 15 minutes, stirring after half the cooking time.
- Blend in flour.
- Stir in vegetable juice, water, peas, salt and pepper.
- Cover and microwave on High until soup is thickened and peas are heated through, 8 to 10 minutes.
- If using oven other than Sharp Carousel, stir after half the cooking time.
