Beef Fajitas With Rice
- 3/4 flank steak, cut into strips
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 Tbsp. vegetable oil
- 1 medium red pepper, sliced
- 1 medium green pepper, sliced
- 2 Tbsp. reduced-sodium soy sauce
- 1 tsp. hot pepper sauce
- 2 Tbsp. lime juice
- 2 c. whole grain Minute rice (uncooked)
- Prepare the rice as directed on the package, omitting the margarine and salt.
- Heat the oil in a large skillet.
- Add the meat, onion and garlic.
- Cook and stir until meat is browned clear through.
- Add the peppers and cook, stirring slowly, until tender. Stir in the water, soy sauce and hot pepper sauce.
- Bring to a boil; remove from heat.
- Stir in the lime juice.
- Serve over the rice.
