Red Beans And Rice
- 3 (15 oz.) cans red beans, undrained
- 2 (12 oz.) can Rotel tomatoes
- 1 (28 oz.) can crushed tomatoes
- 2 Tbsp. cajun seasoning
- 1 Tbsp. chili powder
- 1 tsp. garlic powder
- 1 lb. turkey Kielbasa sausage, sliced into coins
- 1 green pepper, chopped fine
- 1 onion, chopped fine
- 1 Tbsp. cornstarch
- 2-3 Tbsp. water
- 6 cups cooked rice
- In a Dutch oven, combine beans, tomatoes and seasonings.
- Set aside.
- In a skillet, cook sausage, green pepper and onion over med. heat for 5 minutes.
- Add to bean mixture.
- Bring to a boil over med-high heat.
- Reduce to low and cook for 20 minutes.
- In a small bowl combine cornstarch and water until smooth.
- Slowly pour into bean mixture, cooking and stirring until it thickens approximately 1-2 minutes.tlace rice in bowls and top with beans.
