Red Beans And Rice

  1. In a Dutch oven, combine beans, tomatoes and seasonings.
  2. Set aside.
  3. In a skillet, cook sausage, green pepper and onion over med. heat for 5 minutes.
  4. Add to bean mixture.
  5. Bring to a boil over med-high heat.
  6. Reduce to low and cook for 20 minutes.
  7. In a small bowl combine cornstarch and water until smooth.
  8. Slowly pour into bean mixture, cooking and stirring until it thickens approximately 1-2 minutes.tlace rice in bowls and top with beans.
