Green Salad With Spiced Walnuts
- Walnuts:
- 2 teaspoons sugar
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1 cup shelled walnut halves, toasted
- Salad:
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons grated orange zest
- 2 tablespoons orange juice
- Salt and pepper
- 1 large head or 2 small heads red-leaf lettuce
- 2 celery ribs, thinly sliced
- 1 Granny Smith apple, cored and thinly sliced
- Salt and pepper
- Make walnuts: Whisk sugar, olive oil, 2 Tbsp. water, salt, cinnamon and cumin in a large skillet. Add walnuts and toss to coat. Cook over medium-low heat, stirring constantly, until nuts are crisp and slightly glazed, about 2 minutes.
- Make salad: Whisk olive oil, vinegar, orange zest and juice in a large bowl. Season with salt and pepper. Tear lettuce into large pieces and pile on top. Add celery and apple; toss. Top with walnuts and serve.
