Thai Beef Curry

  1. Plunge the corn and beans into boiling water for 2 minutes to soften. Drain.
  2. Heat the vegetable oil in a large wok. Add the onion and garlic, and cook for a couple of minutes.
  3. Add the curry paste, and fry for 2 minutes, stirring. Push the onion mixture to one side.
  4. Increase the heat, add the steak, and cook for 2 minutes to brown.
  5. Add the red pepper, corn, and beans, and mix well. Stir in the lime leaves, sugar, black bean sauce, lime juice, fish sauce, and 1/3 cup water or more if you like a runnier sauce. Bring to a simmer for a couple of minutes.
  6. Season with black pepper, and then sprinkle on the Thai basil and mint.
