Chocolate Chip Muffins
- 2 1/2 c. flour
- 1/2 tsp. salt
- 2/3 c. buttermilk
- 2 1/4 tsp. baking powder
- 2/3 c. butter
- 2/3 c. sugar
- 3 large eggs
- 1 c. chocolate chips
- 1/2 c. low-fat milk mixed with 1 tsp. vinegar or 1/2 c. buttermilk
- 1 1/2 c. All Bran cereal
- 1 c. hot water
- 1/3 c. honey
- 1/4 c. oil (preferably safflower or canola)
- 1/2 tsp. salt
- 1 egg or 2 egg whites, beaten
- 1 tsp. baking soda
- 1 1/2 c. flour (half whole wheat and half white)
- 1/2 c. raisins (optional)
- 1/2 c. chopped nuts (optional)
- 2 Tbsp. poppy or sunflower seeds (optional)
- Preheat the oven to 400u0b0.
- Line muffin tins with paper baking cups or use nonstick muffin pans.
- Make buttermilk by mixing the milk and vinegar.
- Let stand for 5 to 10 minutes.
- Combine the bran cereal, hot water, honey, oil, salt and egg.
- Let stand for 1 or 2 minutes.
