Beef And Vegetable Chowder
- 1 Tbsp. butter
- 1 c. chopped onion
- 2 cloves garlic, pressed
- 1 can (16 oz.) whole tomatoes, undrained
- 1 1/2 lb. ground beef
- 2 (10 oz.) cans beef consomme
- 2 soup cans of water
- 2 c. diced raw potatoes
- 1/2 c. chopped green pepper
- 2 tsp. paprika
- 1 1/2 tsp. salt and pepper
- 1 tsp. caraway seed
- 1 tsp. dried marjoram
- Heat butter in 4 to 5 quart Dutch oven over medium-low heat. Add onions, garlic and ground beef.
- Saute until brown about 10 minutes.
- Add tomatoes breaking into smaller pieces as you stir well.
- Add remaining ingredients and boil.
- Reduce heat and simmer for 20 minutes.
- Ladle into soup bowls and top with cheese toast.
