Chicken Cordon Bleu
- 4 chicken breasts, boned and skinned
- 4 slices lean, cooked ham
- 4 slices Swiss cheese
- 2 Tbsp. chopped, fresh parsley (optional)
- 1/3 c. seasoned dry bread crumbs
- salt and pepper to taste (may not need with some bread crumbs)
- 1/3 c. milk
- vegetable cooking spray
- Place each chicken breast between 2 sheets of waxed paper; flatten to 1/4 inch using rolling pin.
- Place 1 slice of ham and 1 slice of Swiss cheese in center of each chicken piece.
- Sprinkle centers with chopped parsley.
- Roll up lengthwise and secure with wooden toothpicks.
- Combine bread crumbs, salt and pepper.
- Dip each chicken breast in milk; roll in bread crumb mixture.
- Place chicken in baking dish coated with spray.
- Bake, uncovered, at 350u0b0 for 30 minutes.
