Spicy Turkey Skillet
- 1 (15-ounce) can no-salt-added black beans, drained
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, drained
- 2 tablespoons chopped fresh cilantro or parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon hot sauce
- Cooking spray
- 1 pound turkey breast tenderloin, cut into 1-inch pieces
- 3/4 cup chopped onion
- 1/2 teaspoon bottled minced garlic or 1 garlic clove, minced
- Combine first 6 ingredients in a bowl; set aside.
- Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add turkey, onion, and garlic; cook, stirring constantly, until turkey is browned. Stir in bean mixture; bring to a boil. Reduce heat, and simmer, uncovered, 5 to 7 minutes or until turkey is done and most of liquid is evaporated, stirring occasionally.
