Chicken With Artichokes
- 4 slices bacon
- 8 oz. tiny white pearl onions, peeled
- 8 oz. mushrooms, thickly sliced
- 9 oz. frozen artichoke hearts, defrosted
- 3 cloves garlic minced
- 3 chicken breasts, cut into 1-inch cubes
- 2 Tbsp. all-purpose flour
- salt and pepper to taste
- 6 Tbsp. butter
- 1/4 c. flour
- 1 c. milk
- 1 c. Chablis
- 2 Tbsp. chopped parsley
- 1/2 tsp. dried tarragon
- 1/4 tsp. thyme
- salt and pepper to taste
- 1 c. shredded Gruyere cheese
- hot cooked rice
- In a heavy skillet, cook bacon until crisp.
- Remove bacon and drain.
- Add onions, mushrooms, artichoke hearts and garlic to the drippings in the pan.
- Saute for 3 minutes, stirring occasionally.
