Easy Cheesy Noodle Dinner
- 4 oz. (2 1/2 c.) uncooked extra wide noodles
- 2 Tbsp. butter or margarine
- 1/2 c. chopped onion
- 2 Tbsp. all-purpose flour
- 1 1/2 c. (12 oz. can) undiluted Carnation evaporated milk
- 3/4 c. water
- 1 c. (4 oz.) shredded Cheddar cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 c. (8 oz.) cubed turkey or chicken
- 1 1/2 c. frozen English peas, thawed (canned peas, drained, can be used)
- Cook noodles according to package directions.
- In medium saucepan, melt butter; saute onion.
- Stir in flour until smooth. Gradually stir in evaporated milk and water.
- Cook over medium heat for about 5 minutes, stirring occasionally, until mixture comes to a boil and thickens.
- Add cheese and stir until melted. Stir in salt, pepper, noodles, turkey or chicken and peas.
- Heat thoroughly.
- Serve immediately.
