Rutabaga Gratin
- Cooking spray
- 1 cup vertically sliced onion
- 1/4 cup all-purpose flour
- 2 cups 1% low-fat milk
- 1/2 cup (2 ounces) shredded Swiss cheese
- 1/2 teaspoon dried rubbed sage
- 1/4 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 (15-ounce) cans diced rutabagas, drained
- 1/3 cup dry breadcrumbs
- Preheat oven to 400u0b0.
- Place a nonstick skillet coated with cooking spray over medium heat until hot. Add onion; saute 5 minutes or until tender. Stir in flour. Gradually add milk; cook 10 minutes or until slightly thick, stirring constantly with a whisk. Remove from heat; add cheese, sage, garlic powder, salt, and pepper, stirring until cheese melts. Stir in rutabagas.
- Spoon into a 1 1/2-quart shallow baking dish coated with cooking spray; sprinkle with breadcrumbs. Bake at 400u0b0 for 25 minutes or until golden. Let stand 5 minutes.
