Creole Red Beans And Rice
- Vegetable cooking spray
- 3/4 pound smoked turkey sausage, thinly sliced
- 2 cups chopped onion
- 1 1/2 cups chopped green pepper
- 1 cup chopped celery
- 4 cloves garlic, minced
- 2 (16-ounce) cans no-salt-added kidney beans, drained
- 2 (14 1/2-ounce) cans no-salt-added stewed tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon pepper
- 2 teaspoons hot sauce
- 3 cups cooked long-grain rice (cooked without salt or fat)
- 1/3 cup chopped fresh parsley
- Coat a Dutch oven with cooking spray; place over medium heat until hot. Add sausage; cook 3 minutes or until browned, stirring often. Add onion, green pepper, celery, and garlic; saute 10 minutes or until vegetables are tender. Stir in beans and next 4 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 minutes, stirring occasionally.
- Combine rice and parsley in a bowl. To serve, spoon 1/2 cup rice mixture into each bowl. Spoon sausage mixture evenly over rice.
