Italian Sausage With Peppers And Onions
- Olive oil-flavored vegetable cooking spray
- 3/4 pound smoked Italian turkey sausage, cut into 3/4-inch-thick slices
- 2 cups sliced onion
- 1 cup sliced green pepper
- 1 cup sliced sweet yellow pepper
- 1 cup fat-free, no-salt-added spaghetti sauce
- 1 (8-ounce) can no-salt-added tomato sauce
- 1/2 cup water
- 1 tablespoon minced garlic
- 1 teaspoon dried Italian seasoning
- 6 (1-inch-thick) slices French bread, toasted
- Hot sauce (optional)
- Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add sausage, onion, green pepper, and yellow pepper; cook 10 minutes, stirring occasionally. Add spaghetti sauce and next 4 ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes. Spoon turkey mixture evenly over bread slices. Sprinkle with hot sauce, if desired.
