Oatmeal Pantry Cookies
- 1/2 cup (about 3 1/2 ounces) all-purpose flour
- 1/2 cup old-fashioned oats
- 1/4 cup chopped walnuts
- 2 tablespoons semi-sweet chocolate chips
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 baking soda
- 1/3 cup packed dark brown sugar
- 1/4 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 large egg white
- Preheat oven to 350 degrees.
- Combine the first 7 ingredients in a large bowl stirring with a whisk.
- Combine sugar, butter, vanilla, and egg white in a small bowl stirring with a whisk. Add sugar mixture to flour mixture stirring until combined.
- Drop about 2 tablespoons of dough 3 inches apart on baking sheet covered with parchment paper (you will have 8 cookies). Bake at 350 for 12-13 minutes or until beginning to brown around the edges. Cool for 5 minutes on pan; remove to wire rack and cool completely or serve warm.
