Fresh Tomato Pasta

  1. Cook pasta according to package directions, omitting salt and fat; drain well.
  2. Combine tomatoes and next 4 ingredients in a medium bowl; set aside.
  3. Heat a large nonstick skillet coated with cooking spray over medium heat. Add 1 teaspoon oil and onion. Saute 4 minutes; add garlic, and cook 15 seconds, stirring constantly. Add tomato mixture, and cook 3 minutes, stirring frequently. Remove from heat; stir in parsley, remaining 2 teaspoons oil, and salt. Add mixture to pasta, and toss gently. Top with cheese and, if desired, sprinkle with basil.
