Chicken And Stuffing
- 2 (6 oz.) pkg. cornbread stuffing
- 2 Tbsp. melted margarine
- 2 c. chicken broth
- 3 c. cooked chopped chicken
- 1/2 c. finely chopped onion
- 1/4 c. minced chives
- 1/2 c. light mayonnaise
- 3/4 tsp. salt
- 2 eggs
- 1 1/2 c. milk
- 1 can cream of mushroom soup
- 1/2 c. finely chopped celery
- In a medium bowl, mix stuffing, melted butter and 1 1/4 cups chicken broth.
- Mix chicken, 3/4 cup broth, onion, chives, celery, mayonnaise and salt in another bowl.
- Spread 1/2 the stuffing in a 13 x 9 x 2-inch greased baking dish.
- Spread chicken mixture over stuffing.
- Cover with remaining stuffing.
- Whisk eggs, milk and soup together.
- Pour sauce evenly over stuffing.
- Cover with foil. Bake, covered, at 350u0b0 for 30 minutes.
- Uncover; bake for additional 20 to 30 minutes.
- Makes 8 servings.
