Fried Chicken Popsicles
- 10 boneless, skinless chicken breasts
- 2 cups all-purpose flour
- 2 eggs, beaten
- 4 cups panko (Japanese breadcrumbs)
- 3/4 cup grated Parmesan cheese
- Vegetable oil
- 10 craft sticks
- Pound chicken to 1/8 inch thick between 2 pieces of parchment paper or plastic wrap. Trim each piece into a rounded Popsicle shape.
- Place flour in a shallow dish; place eggs in a second shallow dish. Combine panko and cheese in a third shallow dish. Dredge chicken in flour, dip in eggs, and then coat thoroughly with panko mixture.
- Pour oil to a depth of 2 inches in a Dutch oven or heavy saucepan; heat to 350u0b0. Fry chicken, in batches, 2 to 3 minutes on each side or until done. Drain on paper towels until cool enough to handle; insert craft sticks. Serve immediately.
