Snappy Turtle Cookies
- 1 1/2 c. sifted flour
- 1/4 tsp. soda
- 1/4 tsp. salt
- 1/2 c. butter or margarine
- 1/2 c. firmly packed brown sugar
- 1 egg
- 1 egg yolk
- 1 egg white (reserve)
- 1/4 tsp. vanilla
- 1/8 tsp. maple flavoring
- split pecan halves
- Sift together dry ingredients.
- Blend butter and sugar thoroughly; add egg and egg yolk and beat well.
- Blend in flavorings.
- Add dry ingredients gradually; mix thoroughly. Arrange split pecan halves (rounded side up) in groups of three on greased cookie sheets to resemble head and legs of a turtle.
- Mold dough into balls.
- Dip bottom of ball into unbeaten egg white and press onto nuts.
- Bake at 350u0b0 for 10 to 12 minutes.
- Do not overbake.
- Cool and frost generously.
- Makes 2 1/2 dozen.
